Treat your eyes with these winsome jelly cakes that look like lovely koi ponds. We’re not new to gorgeous-looking pastries that looked too good to eat. We’ve seen the ever-popular blooming flower cakes, embroidered cakes, beads cakes, and the shaggy rug cakes. But still, we can’t help but get enamored every time we see new edible masterpieces from creative patissiers across the globe.

Our latest finds are these mesmerizing jelly cakes that mostly depict a peaceful pond with colorful koi fishes and beautiful blooms. This fabulous food art is created by Sydney-based artist Siew Heng Boon who is also the founder of Jelly Alchemy.  Her edible 3D creations feature floral patterns and fishes inside a clear gelatin. With a transparent base, the elements appear to look as though they are floating and swimming around the clear water.

Boon first discovered 3D jelly cakes in 2016 when she visited Malaysia. She was so fascinated by it that she took a course run by a famous jelly art teacher in Malaysia. So when she returned to Sydney, she established her own business called Jelly Alchemy to promote the food art. Unfortunately, she was diagnosed with stage 3 breast cancer in 2017. Since she had to undergo treatment, she had to put her business on hold so she can focus on her health. But that didn’t stop her from doing the food art she loved.

Whenever she’s feeling well, she would create 3D jelly cakes for her doctors and medical staff who are taking care of her. And by doing what she loved best, she was able to shift her focus away from her illness and any negative thoughts. In some ways, the art helped her recover from the disease,  physically and mentally.

Boon typically takes up 4 hours to complete a jelly cake. First, she makes a clear canvas using gelatin powder made from seaweed. She renders flowers, leaves, and fishes by injecting hot liquid colored jelly into the gelatin canvas through specialized tools. The entire process is done upside down with the base on a mold. When she’s done with the design, she pours a thin layer of gelatin base as a finishing touch to seal the bottom part of the cake. So when the cake is flipped over, it reveals the astonishing final result.
