Look at this amazing blue crab I found! ????? April Fools! 😉 It's actually a delicious baked good. I thought this was the perfect time to share an extra special recipe with you: blue crab buns! These slightly sweet buns are flavored with clover flour and clover honey for some herbaceous and floral sweetness and extra tenderness, and are colored completely naturally with butterfly pea powder. I absolutely loved sculpting and decorating these beauties, and I hope you will too! I am so excited to share this extra special recipe with you today! ?? This is a glazed mousse and cake dessert in honor of Persephone, one last goodbye to her home underground as she ascends to guide us through springtime. I like to imagine that she and Hades have one last sumptuous feast together before she leaves. An infusion of heart-soothing hawthorn and wild rose petals steeped in cream goes into both the rich burdock and pomegranate chocolate cake and the rose and pomegranate mousse, a light counterpoint to the cake's rich moistness. For a final finish, the dessert is coated in a glossy mirror glaze, colored naturally with pomegranate juice and fruit and vegetable powders. Chocolate truffles get their name from these valuable and pungent fungi that can be found just under the surface of the forest floor, so I decided to combine the two and make truffle-truffle-truffles (chocolate truffles that look like real truffles all the way through and are flavored with them too.) Do you think roses are cheesy? Well, these ones certainly are! This beautiful snack is comprised of root vegetable roses formed around sharp and delicious plant-based pine nut cheese! I was thinking about the energy of late winter when I created this dish, about how my focus this time of year is drawn downwards into the earth and up into the trees that are just beginning to wake. Then, of course, there are the societal themes: love, romance, bouquets of roses. I just have to say it: these confectionary treats totally rock. I was inspired to create them by the feeling of wonder that accompanies cracking open a geode for the very first time! These exquisite treats are completely edible and deliciously flavored and colored with natural ingredients. There is not a drop of food coloring in any of these colorful shimmering gems. Instead, I relied on other wonders that spring from the earth: roots, plants, and even algae. I was inspired by the endless beauties of various gemstones: citrine, amethyst, peridot, topaz, the list goes on! It feels like some kind of magical alchemy to be able to infuse these crystals with the colors and flavors of plants and herbs. It's truffle season here in the PNW, where both black and white varieties can be found in the wild! Their flavor varies from imported or inoculated varieties from Europe, but I love the differences and richness of the native ones – more on that soon. It makes perfect sense to me that truffle season extends through the winter, since their rich flavors pair so well with the kinds of starchy and creamy foods I crave after a day in the snow or rain! This soup got its name from a particularly inventive snow day. The city I live in had a few days of blizzard and, without the infrastructure to deal with that much snow, things pretty much shut down. Having grown up in the mountains, I was prepared – since my car was completely buried and the roads were basically solid snowbank, I strapped on my cross country skis and skied to the store. There, I grabbed a couple of things (along with some funny looks) that sounded good and stopped to play in the snow on my way home. This was a wonderfully hearty way to wrap up such a magical day! *Secret Recipe*: Plant-based Wild Hunt Pastry Pie with Chestnut Béchamel sauce. ?It's been my mission lately to create plant-based centerpiece dishes for special occasion feasts. This is my latest creation: a golden, decorative flaky pastry pie covered in designs and topped with pastry birds holding their own surprise: baked stuffed apples for dessert! Everything is entirely plant-based, from the seasonal veggies in the filling to the chestnut béchamel sauce they are cloaked in. Even that gorgeously glossy surface is obtained without eggs; instead, I got crafty with some of the pie's ingredients. It's flavored with the wild too: I used two homemade wildcrafted spice blends to flavor both the filling and the apples. After creating my White Witch Cake to pay homage to what I expected Turkish Delight to taste like as a child, I was reminded that this wasn't my first time feeling disappointed by a treat that had been glorified in my mind since childhood. Ah, sugarplums. Those juicy, perfect, sugar-glistened delights! I pictured how they must taste for years before finally getting the chance to try a real, genuine sugarplum. To say I was disappointed is an understatement. This candy I had elevated to a magical experience in my rampant imagination tasted like… raisins. And alcohol. I was heartbroken. I like to think I’ve done my pre-pubescent visions of sugarplums justice in this gorgeous bread topped with confectionary plums. A naturally-purple pastry dough envelops a fragrant filling of spiced dried fruits and nuts, then is topped with mouthwateringly delicious sparkling sugarplum confections. I know we're past the Christmas season, but this bread is still a wonderful and magical creation to enjoy on a winter day! Why do pastries and confections get all the delicate decoration? These may look like some kind of fancy truffle, but they are actually savory onigiri rice balls filled with a variety of fillings from the foraged preserves in my fridge! An edible wafer-paper butterfly flavored with rice vinegar adds a little extra fun and symbolism as I slowly start to emerge from the chrysalis of deep winter. These are really fun to make, beautiful to serve, and super customizable as you can fill them with just about anything! My favorite is a pickled green walnut filling. Yum! Little Turkish Delight-inspired gems of elderflower-champagne and rose-rose gelatin peek out from a soft vanilla mousse, sandwiched by tender sponge cakes. Frosted Branch Tea

Walking through glittered, frosty woods was the inspiration for this unique treat. I knew I wanted to find a way to capture the beauty of the ice crystal-covered branches shimmering in the morning air. Then it came to me: ice is not the only thing that grows crystals! I headed home and started experimenting. What you see here is the essence of that exploration; a spruce branch covered in sparkling sugar crystals, a tea that encapsulates that delightful moment in time. Just pour hot water over it to serve and get a balanced cup of tea, fragrant with its conifer brightness, bitterness tempered by sweet sugar crystals. Are you familiar with the tradition of the BÛCHE DE NOËL, or Yule log cake? This is typically a sweet confection, bedecked in meringue mushrooms. I decided to make my own savory version instead, baked from hearty foraged flours and filled with a wild mushroom and goat cheese filling. Snowflake Cookies

After being bedridden since late September with my brain full of ideas that my body is not strong enough to do, my parents gave me a wonderful gift this weekend: help in bringing at least one project to life. It turns out that I one of the things I CAN do from bed is happily decorate snowflake cookies! These aren’t the typical gingerbread cookies, though. Instead, they are spiced with a homemade blend made of foraged ingredients! From candy cap mushrooms to spicebush berries, wild roses to for tips, juniper to fennel pollen and so much more… these cookies have a beautiful spiciness while tasting of the places I love. My family was kind enough to help me create some spice blends and bake these cookies over the weekend because they know how much it has been driving me crazy not to be able to work on anything. I am hoping I have another good spell soon so I can finish photographing this project and share it with you soon ? . ??? . For those who are curious about my health, not much has changed lately. I pretty much lost all of my muscle tone and fat in the medical crisis I went through this fall, and recovery needs to be careful and slow. I recently found out that I have hypermobility, which means that my connective tissue is more flexible than normal. My physical therapist tells me that that can slow healing after surgery pretty dramatically, and I am already behind since I was so very depleted by the time I was hospitalized. On top of all of that, I am still fighting a tick-born illness similar to Lyme disease and a co-infection that is brutal as well, and both are flaring badly since my body is weak. There is a lot going on in this body of mine, and some days feel oppressively depressing. Brainstorming, research, and writing have been my saving graces. I have been working on developing recipes to test when I feel better and am so excited about them! I just don’t know when I will be at that point and right now I am very much in an inwardly-focused, detached kind of place. Thank you all so much for your patience, kindness, and support through all of this. Having such a wonderful community to interact with has brought me so much comfort. ? . #wildfoodlove #wild

Confectionery Pinecones

Sometimes life is about the little details, like noticing the tiny gills of a minuscule mushroom or the dewdrops sparkling on the fruiting stalks of moss. These particular treats were inspired by the gorgeous pattern of a pinecone cut in half. I love hiding those magical little details in everything I create, including these delicious confectionary pinecones! The base mixture is a bit like fudge, but with the nutty and slightly floral flavor of pine nuts and the rich sweetness of dates. They are relatively simple to make but take some time, so put on your favorite feel-good movie and get to sculpting. Dragon Egg Or Barmbrack Cake?

Somewhere between a soft bread and a cake lies the tempting texture of Barmbrack. This ancient yeast-risen cake far pre-dates the use of baking powder or baking soda. It harkens back to a time when sweets were rare and breads were baked in earthen ovens, a time of candles and intimacy with the landscape and special rites and rituals. Barmbrack is the cake of the holidays of remembrance, a comforting slice to eat as you reflect. Whether you incorporate it into your rituals/celebrations or simply serve it up as a delicious dessert, breakfast, or snack, it's the perfect treat for autumn. Often flavored with brewed tea or alcohol, it is delightfully flavorful and punctuated with plenty of specks of dried fruit- I used dried foraged berries and apricots. Pizza Sandwich Cake

Wild Pizza Sandwich Cake: Four words so random they sound like you drew them out of a hat. Not so! I wanted to take the savory sandwich cakes from Scandinavia and put my own Northwest twist on them. This savory "cake" is made from hearty curly dock seed bread, then filled with foraged bee balm pizza sauce, wild greens pesto, and a variety of pizza toppings from bell peppers to pepperoni. Then, the whole thing is "frosted" in a light yellow turmeric cream cheese mixture. Some decorations of parsley leaves and bee balm flowers make it a dainty treat to share at a party. It's got all of the wonderful flavors of pizza without the heat – and I think you'll be pleasantly surprised at just how well pizza inspiration transfers to sandwiches, and then to this lovely cake big enough for a party. I've just posted the much-anticipated recipe for my sea urchin cakes, made from a delicious gluten-free dark chocolate cake with a secret ingredient: dulse seaweed. Yep, you read that right. You can't taste the seaweed in the batter, but it magically keeps the cake nice and moist and layers a complex umami undertone that just can't be beat. Candy Cap Mushrooms

Mushrooms may seem like an odd addition to chocolate truffles, until you consider the candy cap mushroom. These unassuming little brown mushrooms have an intoxicating maple-like flavor that is strong enough to perfume an entire room. Even better, when you eat them the smell permeates through your body and your skin gives off a pleasant warm maple scent too. This time of year I think a lot about mushrooms and moss, those first signs of new life hiding amongst rotting logs. Mycelium, the network of threads that function as the "roots" of fungi can be seen as white threads underneath the snow. There's magic to be found in the woods right now…and there's definitely magic in these sugar-free whiskey-spiked truffles. Finally, we have Edible Bones

If you were to stumble upon a pile of mossy, rune-covered bones in the woods, what would you do? Run quickly away? Poke them with a stick? Eat them? While that last one might not be your first instinct, you totally could take a bite out of the bones in this picture. And that bite would be delicious! I’ve had the idea of mossy old bones in the back of my head for almost a year now, but hadn’t figured out how to make them without complex molds… then I watched @christinehmcconnell ’s fascinating new show on Netflix and got inspired by her peanut butter bone treats! I wanted my version to reflect the actual flavor of those deep and mossy woods, so I whipped up a batch of chocolate caramel (instead of her peanut butter clay) and infused it with plenty of candy cap mushrooms. These magical little members of the lactarius family give everything they touch a strong maple-like flavor with earthy undertones, absolutely perfect when paired with smooth caramel, crunchy pretzels, and creamy milk chocolate. Mmm.
